Allergy Friendly Tofu Stir Fry

With my severe allergies, I have never been able to eat out at any type of Asian cuisine. Stir fries, sushi, etc. were all foods that remained a mystery. That is why when I made this Tofu Stir Fry I was so excited! It is super easy to make and delicious :) Best part is that its free of many of the top allergens, packed with veggies, and vegan!

Tofu marinade Ingredients:

- 2 TBSP soy sauce

- 1 TBSP rice vinegar

- 1 tsp corn starch

- 1 garlic crushed

- 1 knob of ginger grated

Stir fry sauce:

- 5 TBSP soy sauce

- 1 TBSP of rice vinegar

- 1-2 TBSP of water

- crushed garlic

- grated ginger

- 1 TBSP of sriracha

- 1 TBSP honey

- 1 TBSP corn starch

- 1 TBSP sesame oil

Baked Tofu: 1) Preheat oven to 400 F

2) Drain water from tofu and slice them into cubes and cover with towel to absorb as much water.

place cubed tofu with marinade mixed well in refrigerator for at least 30 min before baking

3) Line baking sheet with parchment paper and bake tofu for 40 min, flipping half way through.

Stir fry:

1) Saute all vegetables until tender

2) Add baked tofu and mix everything gently

3) Last step add prepared stir fry sauce and cook for additional minute
