Top 9 Allergen Free Burrito Bowl Recipe



Ingredients:

~Four tablespoons of Avocado Oil

~One Medium

Sized Yellow Onion

~One Diced Red Bell Pepper

~One Diced Yellow Bell Pepper

~One cup of your preferred store brought Salsa

~Two 15 1/2 oz. of Black Beans

~One cup of frozen Yellow Corn Kernels

~Two cooked Chicken Breasts (sliced)

~One cup of white rice

~Three tablespoons of taco seasoning

~Salt and Pepper

~Two and a half cups of water


Directions:

  1. In a large pot heat the Avocado Oil and saute the onions until translucent

  2. Add the diced peppers and saute for 2-3 more minutes

  3. Add the Salsa and mix

  4. Add 1/2 cup of water and let it simmer for five minutes

  5. Add Black Beans and Corn, then mix

  6. Scatter chicken slices throughout the pot and add the rice, taco seasoning,salt, pepper, and mix

  7. Add the remaining cups of water and let it simmer until it begins to slightly boil

  8. Reduce heat to low, cover pot, and let it cook for 30 minutes (or until rice is fully cooked)

  9. Enjoy with any toppings you like such as salsa, guacamole, cheese, etc.
